It was the perfect harmony of textures and tastes: a crispy exterior giving way to soft, pillowy bread that was somehow both light and hearty. That bread was, in a word, transcendent. Later that evening, as we dined at the hotel restaurant, I found myself breaking the rules. Slipping Beemo first a small and then a big slice of foie gras under the table, I couldn’t help but giggle at his delight. Hein rolled his eyes at me, the way he always does when I spoil Beemo.
